FRENCH TOAST WITH BERRY COMPOTE
4 PORTIONS
INGREDIENTS:
8 slices Brumby's thick-cut white sandwich bread
4 eggs
1/2 cup milk
1 tsp vanilla extract
1 tsp ground cinnamon
2 Tbs caster sugar
2 Tbs butter, for frying
2 bananas, sliced
170g frozen mixed berries
2 Tbs sugar
1 Tbs lemon juice
TO SERVE
Whipped cream/Greek yoghurt/maple syrup
METHOD:
1. Make the berry compote: Place frozen mixed berries and sugar in a saucepan over medium-high heat. Cook, stirring occasionally, until the sugar has dissolved. Remove from heat and stir in lemon juice. Let cool then refrigerate until needed.
2. Make the custard: In a wide shallow bowl whisk together eggs, milk, vanilla extract, cinnamon and caster sugar until well combined with no egg whites remaining.
3. Soak the bread: Dip each slice of bread into the custard, soaking 20–30 seconds per side. Thick-cut bread is key — it absorbs the custard without falling apart.
4. Fry: Melt butter in a large non-stick pan over medium heat. Cook soaked bread slices 3–4 minutes per side until deep golden brown. Work in batches, wiping the pan and adding fresh butter each time. Keep cooked slices warm in a low oven (100°C).
5. Serve: Plate 2 slices per person. Spoon berry compote generously over the top and add a few slices of fresh banana. Finish with a dollop of whipped cream or Greek yoghurt and a drizzle of maple syrup.
BREAD TIP:
Leave slices out uncovered for 30 minutes before soaking — this helps them hold together in the custard.
